    Ingredients

    • 1/4 cup Pure Wesson® Canola Oil
    • 1-1/2 cups chopped yellow onion
    • 1/2 cup chopped carrot
    • 2 tablespoons finely chopped garlic
    • 4 cups water
    • 2/3 cup grated Parmesan cheese
    • 1 cup apple cider
    • 1 carton (33.5 oz each) Hunt's® Tomato Sauce
    • 2 cans (6 oz each) Hunt's® Tomato Paste
    • 1 can (12 oz each) evaporated milk
    • 2/3 cup grated Parmesan cheese
    • 3 Honeycrisp or Fuji apples, peeled, cored and sliced

    Directions

    1. Heat oil in large saucepan over medium-high heat. Add onion and carrot; cook 2 to 3 minutes or until onion is tender. Add garlic; cook 1 minute more or until fragrant.
    2. Add water, apples, apple cider, tomato sauce and tomato paste to saucepan; stir to combine. Reduce heat and simmer 15 minutes, stirring occasionally.
    3. Remove soup from heat. Carefully blend mixture with hand-held immersion blender until smooth. Stir in milk. Top each serving with cheese.
